    Ajipon (味ぽん) is a citrus seasoned soy sauce from Mizkan that’s become a kitchen staple in many households in Japan. The product debuted in 1964 under the name of Mizkan Ponzu Ajitsuke (味つけ), and later in 1967, it changed its name to Mizkan Ajipon.

Founded in 1804 by Matazacmon Nakano I, Mizkan began its journey in IIanda, near Nagoya, a region celebrated for its brewing industries. The company's inception was rooted in the production of rice vinegar, which quickly became an integral part of Japanese cooking, marking the start of Miskan's enduring legacy. The carly years saw Mizkan capitalizing on the abundant supply of sake lecs, a byproduct of sake brewing, to produce vinegar. This method not only showcased the brand's innovative approach to sustainability but also contributed to the distinctive taste of its vinegar. Over the years, Mizkan's rice vinegar evolved, incorporating advancements in production techniques while staying true to the traditional fermentation processes that define its quality and flavor. Production Process: -

Selection of Ingredients: Mizkan begins by carefully selecting high-quality rice or rice wine (sake) as the primary ingredient for its vinegar. This choice is crucial as it determines the flavor profile and overall quality of the vinegar. The ingredient list typically includes: . Rice or Rice Wine (Sake): The primary ingredient, providing the foundational flavor and fermentable sugars necessary for vinegar production. . Water: Used to dilute the rice wine to the desired acidity level. . Acetic Acid: Naturally occurring from the fermentation process, this gives vinegar its characteristic tangy flavor.

For specialized varieties of Mizkan rice vinegar, such as seasoned rice vinegar (often used for sushi rice), additional ingredients may include:

Sugar: Added for sweetness, balancing the acidity. 

Salt: Enhances flavor and is essential for seasoning sushi rice.

Filtration and Clarification:

Once matured, the vinegar undergoes filtration and clarification to remove any solids or impurities, resulting in a clear and smooth final product.

Fermentation: -

Acidification & Maturation: -

Once the alcohol fermentation is complete, the next step involves acidification, where the alcohol is further fermented into acetic acid. After acidification, the vinegar is allowed to mature for a period of time, during which its flavors develop and mellow. Mizkan has Two Principles that should always be observed. As a company, we do not simply seek to improve our performance. Putting the Two Principles at the heart of what we do, we aim to achieve performance improvement through continuous quality improvement. We uphold tradition but never stop striving for better. We will keep growing by continuing to innovate and challenge ourselves.

1. Offer Customers Only the Finest Products Connect with customers to serve them better This principle captures Mizkan’s commitment to quality improvement, which makes customers the top priority. It highlights the need to respond to changes in the world by adopting the perspective of customers who purchase Mizkan products, as well as retailers, business partners, suppliers, and internal stakeholders. It points to the need to improve not only product quality, but also every aspect of customer satisfaction by improving the quality of corporate management. This is the meaning conveyed by the principle “Offer Customers Only the Finest Products.” Historically, it was at the start of a period of rapid economic growth that we came up with this principle. Owner Matazaemon Nakano VII first started using “Offer Customers Only the Finest Products” in 1959, and then later framed it as part of the “Three Points of View (customer, employee, management).” The message was to “connect with customers to serve them better.” In modern-day terms, “Offer Customers Only the Finest Products” expresses how much we value our stakeholders.

 

2. Continuously Challenge the Status Quo Ask yourself what you can do better This principle expresses Mizkan’s commitment to continuous innovation. Another way to put it is to look at the facts in an honest and humble manner to change ourselves for the better. As a company that has repeatedly carried out innovation and challenges in anticipation of the future, Mizkan’s history flows from this principle. However, innovation is not something that can be achieved simply by embracing challenges aimlessly. We need to look at ourselves objectively to check we are not taking the easy way out or becoming complacent with success. We can develop this mindset by working to anticipate the future and relentlessly pursuing self-improvement. If we consistently ask ourselves what we can do better, we can recognize the opportunities offered by major changes and even convert risks into opportunities. The earliest version of this principle came about in 1974, during the first oil crisis. The intention was to constantly look at the status quo in order to review our management of the business in a difficult economic climate. Later, we added on the “challenging” element to make it what it is today. Common Norms

Mizkan has accumulated what it has inherited since its founding, and today, its teachings are summarized in "two origins" and "knowledge". The "Common Code" is a summary of what kind of axis (backbone) all Mizkan Group employees should have in their daily work, what kind of perspective they should look at, and how they should act.

This is a compilation of hints for thinking about how to act at the "business" level, in order to connect the two origins, principles, common norms, and the SENOBI concept to the actions of individual employees. For each of the 16 operations, we have compiled a policy of “protecting and penetrating as Mizkan-ness” and “what we should change for the better as Mizkan.” It is the basis of judgment.
